
Stop the Bottleneck at Your Bakery Counter
We’ve all seen it. The morning rush hits, the line is out the door, and suddenly everything slows down at the serving counter. The biggest culprit? Those slow-heating lamps. By the time the food is actually plated, it’s already losing heat. Your staff is scrambling, the customers are waiting, and the food just isn’t coming out the way it should. The fix is simpler than you’d think: swap your old lamps for shortwave infrared (IR). Why it actually works Most heaters try to warm up the air around the food first. That takes forever. Shortwave IR is different. It hits the food directly with radiant energy the second you flip the switch. No lag. No waiting for the “warm-up” phase. It just works. This keeps your production moving at a steady clip and ensures the pastry or bread stays hot right up until it hits the customer’s hand. Getting the right fit You don’t want to spend your weekend rewiring the entire counter. To keep it simple, just match the footprint you already have. Most of these setups use quartz glass tubes with R7s or SK15 connectors. They’re basically “plug and play.” When we pick these out, we look at the wattage-per-centimeter. It’s all about making sure the heat is strong enough to reach the food from the height of the lamp. One quick tip: if you’re jumping from a 250W lamp to a 500W one to get more heat, double-check your wiring. Older circuits can get stressed by that extra pull, and nobody wants a blown fuse in the middle of a rush. The catch Here’s the thing: this heat is intense. Because it’s so focused, you have a much smaller margin for error. If the food is sitting too close to the lamp, you’ll torch the top before the middle is even warm. You’ll need to play around with the mounting height to find that sweet spot. It takes a little bit of tweaking, but that’s a small price to pay for a line that actually moves.
